Distilleries et Domaines de Provence is a French spirits producer based in Provence, specializing in absinthe production. The house continues a tradition rooted in one of France's historic absinthe-producing regions, where the spirit has been manufactured for generations.

Provence has long been associated with absinthe production, particularly in areas where the botanicals essential to the spirit—wormwood, anise, fennel, and numerous herbs—grow abundantly or are readily sourced. French absinthes are characterized by their balance of botanicals and typically higher alcohol content, with production methods that range from traditional maceration and distillation to more contemporary approaches. The region's producers have maintained various interpretations of the absinthe style, from heavily herbaceous expressions to more refined, delicate versions.

The current range includes Absinthe 55, which reflects the house's approach to the spirit's composition and proof.
