Tasting Notes

Kanomori turns out to be very soft, characterised by an intense taste and a long finish, literally giving the impression of being in the middle of the forest. The nose is complex, spicy, notes of herbs and citrus stand out clearly. The palate is powerful and enlivened by very subtle notes of citrus fruits, wild herbs, medicinal notes, imprinted by kuromoji. A remarkable complexity that tends towards more roundness and smoothness thereafter, towards a lingering finish, both round and spicy.

Yomeishu Seizo is a Japanese spirits producer that has expanded into gin production, representing the growing craft distilling movement in Japan. The company operates from Japan, where it produces gin alongside its traditional operations, contributing to the country's emerging reputation in premium spirit manufacturing beyond its well-established sake and whisky industries.

Japanese gin production has gained recognition for incorporating distinctive local botanicals and applying traditional Japanese craftsmanship principles to Western distilling techniques. Many Japanese distilleries draw on the country's rich botanical diversity, often featuring ingredients like yuzu citrus, sansho pepper, cherry blossoms, or green tea alongside conventional gin botanicals. This approach creates gins with unique flavor profiles that reflect Japanese terroir and culinary traditions.

Yomeishu Seizo's current gin range includes Kanoshizuku Gin and Kanomori, representing the producer's interpretation of Japanese gin craftsmanship. These expressions demonstrate the company's commitment to this category within the broader context of Japan's innovative approach to international spirit styles.
