Acústic Celler is a small winery based in the Montsant appellation of Cataluña, in northeastern Spain. Montsant is a DO (Denominació d'Origen) that encircles the more famous Priorat, sharing much of the same rugged, mountainous terrain characterised by llicorella slate soils and old-vine plantings. The area was granted its own appellation status in 2001, having previously been part of the broader Falset designation.
White wines from Montsant are less widely seen than the region's reds, but the appellation permits a range of both indigenous and international varieties. Acústic Celler works with a blend of Grenache Blanc, Macabeo, Xarel·lo, and Pinot Gris for their white, which is an interesting combination of local Catalan grapes alongside the Burgundian Pinot Gris. Xarel·lo and Macabeo are both deeply rooted in Catalan viticulture, particularly associated with Cava production, while Grenache Blanc is widely planted across southern France and northeastern Spain.
The inclusion of multiple white varieties in a single blend points to a style oriented around complexity and texture rather than varietal expression alone. Montsant's continental climate — with warm summers, cold winters, and significant diurnal temperature variation — supports the retention of natural acidity in white wines, an important factor in balancing blends that include fuller-bodied varieties like Grenache Blanc.
