Givry is a small wine-producing village located in the heart of the Côte Chalonnaise region of Burgundy, France. The village is known for producing some of the finest Pinot Noir wines in the region, as well as a small amount of Chardonnay.
The history of winemaking in Givry dates back to the Roman era, when the area was first planted with vines. However, it wasn't until the Middle Ages that winemaking in the region really took off, with the establishment of several monasteries and the construction of the Château de Germolles, which served as the residence of the Dukes of Burgundy.
Today, Givry is home to around 60 winemakers, many of whom are small, family-run operations. The wines produced in Givry are known for their elegance and finesse, with a focus on purity of fruit and a delicate balance of acidity and tannins.
The style of production in Givry is traditional, with a focus on hand-harvesting and minimal intervention in the winemaking process. The grapes are typically fermented in open-top wooden vats, with a combination of whole-cluster and destemmed fruit. The wines are then aged in oak barrels for up to 18 months, depending on the vintage and the style of the wine.
