Labouré-Gontard is a French wine producer based in Burgundy, working within the Chablis appellation. Their portfolio, at least as represented here, focuses on white wine made from Chardonnay — the sole permitted grape variety in Chablis — and includes a kosher-certified expression, indicating production under rabbinical supervision to meet kosher dietary standards.
Chablis occupies the northernmost part of Burgundy, situated around the Serein river in the Yonne département. The appellation is defined by its Kimmeridgian limestone soils, composed of ancient marine sediment rich in fossilized oyster shells. This geology, combined with the cool continental climate, gives Chablis its characteristic profile: high natural acidity, a mineral or flinty character, and restrained fruit, typically leaning toward green apple, citrus, and chalk rather than the richer, more tropical notes associated with warmer-climate Chardonnay. The wines are almost always unoaked or lightly oaked, preserving their fresh, lean structure.
The kosher designation on Labouré-Gontard's Chablis means the wine has been produced and handled according to Jewish law throughout the winemaking process, often involving supervision by a certified mashgiach and, in some cases, production as mevushal (flash-pasteurized). For observant Jewish consumers, this certification is a practical necessity; for others, it represents a Chablis produced within the same classic appellation framework as any other.
