Enoki Shuzo

Enoki Shuzo is a sake producer based in Japan. The brewery specializes in sake production, with a focus on distinctive aged expressions that reflect careful fermentation and maturation practices.

Japanese sake breweries vary considerably in their approaches to fermentation, ingredient sourcing, and aging protocols. Some producers emphasize traditional methods and regional characteristics, while others experiment with longer maturation periods to develop complex flavor profiles. Aged sake, known as koshu when it develops golden hues, can acquire deeper, more oxidative notes compared to freshly brewed varieties. Kijoshu represents a particular style of sake made with sake added during brewing rather than water alone, resulting in naturally sweet, full-bodied expressions with concentrated character.

Enoki Shuzo's current range includes Hanahato, a kijoshu expression aged for eight years, which demonstrates the producer's interest in extended maturation and the development of mature sake characteristics.
