Grillo is an indigenous white grape variety from Sicily, where it has been cultivated for centuries. Originally grown primarily in the western part of the island around Trapani and Marsala, this variety was historically used in the production of Marsala fortified wine. The grape thrives in Sicily's hot, dry Mediterranean climate and volcanic soils, particularly in areas with good diurnal temperature variation that helps preserve acidity.

Grillo produces wines with bright acidity and medium body, typically displaying citrus notes of lemon and grapefruit alongside stone fruit flavors like peach and apricot. The wines often exhibit mineral undertones and herbaceous qualities, with some examples showing hints of Mediterranean herbs and saline characteristics.
