About this mezcal

Ilegal Joven is the unaged expression from this Mexican mezcal house, distilled from agave hearts roasted in traditional earthen pits. That pit-roasting is what gives mezcal its signature smokiness, distinct from the cleaner profile of tequila. Bottled young, with no time in wood, it shows the spirit in its rawest, most agave-forward state.

Expect a bright, smoky nose and a peppery, mineral palate with real bite. Serve neat over ice at 18-20°C as an aperitif, or reach for it behind the bar for a proper mezcal margarita or Paloma.

The Illicit Affair is a shaken cocktail made with Illegal - Mezcal - Joven, served in a coupe.

Thin, long strip of grapefruit peel expressed over the drink's surface and laid across the rim; three grains of Maldon sea salt placed in the center of the foam

Ingredients

  • 45 ml Illegal Mezcal Joven
  • 20 ml Chartreuse Verte
  • 15 ml Fresh lime juice
  • 10 ml Agave nectar
  • 2 dashes Angostura bitters
  • 1 egg white
  • Pinch sea salt

Method

  1. Add all ingredients to a cocktail shaker without ice
  2. Dry shake vigorously for 10 seconds to emulsify the egg white
  3. Add a large handful of ice to the shaker
  4. Shake intensely for 12 seconds until well-chilled
  5. Double strain through a fine mesh strainer into the prepared glass
  6. Allow the foam to settle for 5 seconds before serving

Serve

Serve in a chilled coupe glass. Garnish with a thin, long strip of grapefruit peel expressed over the drink's surface and laid across the rim. Top the foam with three grains of Maldon sea salt placed in the center. Present with the grapefruit peel draped elegantly over one side of the glass rim.
