The Cellini Renaissance is a shaken cocktail made with Cellini - Grappa, served in a coupe glass.

- Thin lemon wheel placed on the surface of the drink, single star anise positioned on the rim, and freshly grated nutmeg dusted lightly on the foam top
Ingredients
- 45 ml Cellini Grappa
- 30 ml Amaro Nonino
- 20 ml Fresh Lemon Juice
- 15 ml Honey Syrup
- 2 Dashes Aromatic Bitters - 1 Egg White
- Splash Prosecco
Method
- Add Cellini Grappa, Amaro Nonino, fresh lemon juice, honey syrup, and aromatic bitters to a cocktail shaker.
- Add the egg white to the shaker.
- Dry shake vigorously for 12 seconds without ice to emulsify the egg white.
- Add a handful of ice to the shaker and shake again for 15 seconds until well-chilled.
- Double strain into the prepared glass using a fine mesh strainer.
- Top with a splash of Prosecco and stir gently.
Serve
Coupe glass chilled with ice water and dried. Garnish with a thin lemon wheel placed on the surface of the drink and a single star anise positioned on the rim. Dust the foam top lightly with freshly grated nutmeg for aromatic complexity.
