Barbados holds a significant position in Caribbean rum production, with regulations requiring that Barbadian rum be distilled, aged, and bottled on the island. The tropical climate accelerates the aging process, with rums maturing more rapidly than spirits aged in temperate climates due to higher rates of evaporation and wood interaction. Mount Gay ages their rums in a combination of American oak bourbon barrels and other oak casks, developing the characteristic amber to dark color and complex flavor profiles associated with Caribbean aged rums.
