The expression of Sauvignon Blanc de Loire in the style of the Roc de l'Abbaye winemaker. Rigorous selection of grapes by observation of the plots before harvesting. Cold pressing to preserve the fresh aromas of the grape variety. Fermentation at a controlled temperature (16-18°C) preserves the fruit and develops the exotic notes of the wines . It then proceeds to aging on fine lees for 3 months with regular stirring to preserve all the aromatic freshness without adding excessive roundness to the wine.
