Pazo de Señorans werd in de jaren 1970 gekocht door het echtpaar Marisol Bueno en Javier Mareque. Ze begonnen wijn te maken in 1989 en waren de drijvende kracht achter de creatie van de Rías Baixas DO. Het wijnhuis wordt gezien als het beste wijnhuis van Gallicië en algemeen beschouwd als de beste witte wijn die in Spanje wordt geproduceerd. Het wijnhuis is nu in handen van hun vier kinderen, Marisol, Vicky, Javier en Santiago.

Wat zijn voor u, als een van de toonaangevende producenten in Rías Baixas, de belangrijkste factoren bij het produceren van kwaliteitswijnen?

We proberen wijnen te maken die de kenmerken van het gebied en de eigenaardigheden van Albariño weerspiegelen. Elk jaar kijken we hoe we ons wijngaardbeheer en onze oogsttechnieken kunnen verbeteren, waarbij we speciale aandacht besteden aan het hele proces. We werken voortdurend aan verschillende onderzoeks- en ontwikkelingsprojecten en onderzoeken momenteel hoe we de teelt van Albariño kunnen verbeteren met behulp van modellen die zijn gebaseerd op zowel satellietbewaking op afstand van wijngaarden als een systeem van sensoren op locatie.

Hoe zou je je wijnen omschrijven? 

We maken eerlijke wijnen, die in de mond geven wat ze op de neus beloven en die de maximale kwaliteit van elk oogstjaar uitdrukken. 

Rias-Baixas is a wine region located in the northwest of Spain, specifically in the province of Pontevedra, in the autonomous community of Galicia. This region is known for producing some of the best white wines in Spain, particularly those made from the Albariño grape variety.

The history of winemaking in Rias-Baixas dates back to the 12th century, when monks from the Cistercian order began cultivating vines in the area. However, it wasn't until the 1980s that the region gained recognition for its wines, thanks to the efforts of a group of local winemakers who sought to promote the Albariño grape and the unique terroir of Rias-Baixas.

Today, Rias-Baixas is home to over 180 wineries, many of which are family-owned and operated. The region's vineyards are located close to the Atlantic Ocean, which has a significant influence on the climate and soil. The soils in Rias-Baixas are predominantly granite-based, with some areas also containing slate and sandstone.

The style of production in Rias-Baixas is focused on producing fresh, aromatic white wines that showcase the unique characteristics of the Albariño grape. The grape is known for its high acidity, which gives the wines a crisp, refreshing character. The wines are typically fermented in stainless steel tanks to preserve their freshness and fruitiness, and are often aged on their lees to add complexity and texture.

In addition to Albariño, Rias-Baixas also produces small quantities of red wines made from the Mencía grape variety. These wines are typically light-bodied and fruity, with a refreshing acidity that makes them a great match for the local cuisine.

Overall, Rias-Baixas is a region that is known for producing high-quality white wines that are perfect for pairing with seafood and other local dishes. The unique terroir of the region, combined with the expertise of its winemakers, has helped to establish Rias-Baixas as one of the top wine regions in Spain.
