Tasting notes
William Fèvre Chablis 2023 displays a pale gold colour with bright green reflections and opens with a precise, fresh nose of citrus lemon and lime alongside white fruit such as pear and subtle floral hints. On the palate, it is dry, crisp, and finely structured, with lively acidity and a pronounced mineral backbone, showing classic Chablis notes of saline, chalk, and wet stone. The flavours are clean and focused, combining citrus and orchard fruit with a supple, slightly rounded texture. The finish is fresh, linear, and persistent, leaving a refined impression of purity and minerality typical of a well-crafted village Chablis.

About this wine
The 2016 Chablis comes from 48 hectares belonging to William Fevre and was cropped at just 18 hectolitres per hectare. It has a compact bouquet with scents of cold stone but is very tight and needs more fruit expression. The palate is well balanced with a fine seam of acidity and is quite saline in the mouth with a precise finish. Now the palate shows more potential than the aromatics, but this will come good with a year in bottle.
