Sherry is a fortified wine produced exclusively in the Andalucía region of southern Spain, specifically within the Jerez-Xérès-Sherry appellation. Made primarily from the Palomino grape variety, sherry undergoes a unique aging process that creates distinct styles ranging from bone-dry to intensely sweet. The wine's character develops through biological or oxidative aging, often utilizing the traditional solera system where wines of different ages are blended systematically.
The production centers around three main towns: Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. The key styles include Fino and Manzanilla, which age under a protective layer of yeast called flor, resulting in pale, dry wines with distinctive nutty and saline notes. Amontillado begins as a Fino but loses its flor, developing through oxidative aging into a more complex, amber-colored wine. Oloroso ages entirely through oxidation, producing fuller-bodied, darker sherries. Pedro Ximénez, made from sun-dried grapes of the same name, creates intensely sweet, dark sherries with raisin and molasses characteristics.
Quality producers like Lustau demonstrate the diversity of sherry styles, from their Almacenista bottlings that showcase single-grower vineyard sources to their range spanning dry Amontillados and sweet Pedro Ximénez expressions. Traditional houses such as Tio Pepe represent classic Fino production, offering the archetypal dry, crisp style that has defined sherry for generations. These producers maintain the centuries-old solera systems that give sherry its consistent quality and complex flavor development.
