Calvados is an apple brandy produced exclusively in the Normandy region of northern France, where it has been distilled since the 16th century. This protected designation spirit is made primarily from fermented apple cider, though pears may also be included in certain appellations. The production follows strict regulations governing everything from the apple varieties used to the aging requirements in oak barrels.

The spirit is produced across three main appellations within Normandy: Calvados AOC, Calvados Pays d'Auge AOC, and Calvados Domfrontais AOC. Traditional production involves fermenting local apples into cider, then distilling the cider either once in column stills or twice in copper pot stills, depending on the appellation. After distillation, Calvados must be aged in oak barrels for a minimum of two years, though premium expressions often age much longer to develop greater complexity and smoothness.

Age statements on Calvados bottles indicate the youngest spirit in the blend, with classifications ranging from Fine or Trois Étoiles (minimum two years) to XO (minimum six years) and beyond. Château du Breuil represents one of Normandy's respected producers, known for their traditional methods and extended aging programs that create well-balanced spirits with the characteristic apple character softened by oak influence.
