In Champagne production, the sweetness is determined by the dosage—a mixture of wine and sugar added after disgorgement. Demi Sec Champagnes contain between 32-50 grams of residual sugar per liter, making them noticeably sweet while maintaining the wine's natural acidity and effervescence.

These wines offer a balanced interplay between sweetness and the characteristic acidity of Champagne. The sugar content provides richness and body while the bubbles and acidity prevent the wine from becoming cloying. Demi Sec Champagnes typically display flavors of ripe orchard fruits, honey, and brioche, with the sweetness enhancing rather than masking the underlying fruit character and terroir expression.

While less common than Brut styles, Demi Sec Champagnes are produced by major houses in the region.
