The 2018 Chardonnay has pretty scents of dried leaves, hay and almonds with underlying spicy notes and a core of honeyed white peaches. Medium-bodied, the palate is silky in texture with savoury, spicy character, seamless freshness, and a long finish.
The 2016 Chardonnay features a wonderfully spicy nose of nutmeg, ginger ale and coriander seed with a core of Bosc pears, ripe nectarines and applesauce. Medium to full-bodied, the palate has fantastic freshness with a zippy acid line lifting all those fantastic spices to a good long finish.
The 2015 Chardonnay simply sings of honeyed peaches, spiced pears, and pink grapefruit with hints of honeycomb, brioche and chopped cashews. Full-bodied, wonderfully flashy and decadent, it fills the palate with spicy stone fruits, offset by a racy backbone and finishes long and creamy.

Dubbed the ‘Steve Jobs of wine’ by Forbes magazine, Paul Hobbs is a renowned winemaker and consultant. Highly regarded not only for his ability to identify exceptional vineyards, but also for his pioneering spirit in working innovatively with new and historical sites and regions.

Hired by Robert Mondavi for his advanced understanding of oak ageing, he went on to become winemaker for Opus One and Simi wineries. He founded Paul Hobbs Winery in 1991 and Viña Cobos in Argentina in 1999.

“Terroir-driven Chardonnay, Pinot Noir, and Cabernet Sauvignon are the focus at Paul Hobbs Winery.” Paul Hobbs

Paul Hobbs Winery bought its first estate property in the Russian River Valley naming it Lindsay Vineyard in honour of Paul’s great grandmother and planted it with five clones of Pinot Noir. Two neighbouring estate properties have since been planted with Chardonnay. The winery also works closely with growers of some of Napa and Sonoma’s most compelling and historical properties.

“I strive to create exuberant, intensely flavoured, richly textured wines of structure and balance that reflect the specific personality of each vineyard site. You might describe our winemaking as modern classic. Making wine, like living well, is a balance of experience and intuition, discipline and discovery. We believe we can make the best wines by keeping our roots firmly planted in traditional winemaking principles while availing ourselves of modern techniques. This approach allows us to constantly improve the quality of our wines.” Paul Hobbs

California is a region that is well-known for its wine production. The state has a long history of wine production, dating back to the 18th century when Spanish missionaries first planted grapevines in the area. Today, California is home to some of the most famous wine producers in the world, including Napa Valley and Sonoma County.

One of the most well-known wine producers in California is Robert Mondavi Winery. Founded in 1966, the winery is located in the heart of Napa Valley and is known for its high-quality Cabernet Sauvignon and Chardonnay. Robert Mondavi Winery is also known for its commitment to sustainability, using environmentally friendly practices in its vineyards and winemaking processes.

Another famous wine producer in California is Opus One Winery. Founded in 1979 by Robert Mondavi and Baron Philippe de Rothschild, Opus One is located in Napa Valley and is known for its Bordeaux-style blends. The winery uses a combination of traditional and modern winemaking techniques to produce its high-quality wines.

In addition to these famous wine producers, California is also home to a number of smaller, boutique wineries. One such winery is Kistler Vineyards, located in Sonoma County. Kistler Vineyards is known for its Chardonnay and Pinot Noir, which are made using traditional winemaking techniques and aged in French oak barrels.

Moving on to spirits, California is also home to a number of famous distilleries. One such distillery is St. George Spirits, located in Alameda. St. George Spirits is known for its artisanal spirits, including gin, vodka, and absinthe. The distillery uses a combination of traditional and modern techniques to produce its high-quality spirits.

Another famous distillery in California is Anchor Distilling Company, located in San Francisco.
