The Fattoria le Pupille 2021 Saffredi is 65% Cabernet Sauvignon, 25% Merlot and 10% Petit Verdot that offers seamless integration of dark fruit flavors that bleed directly into spice, Tuscan cigar and earthy iris root. This vintage is compact and firm, especially in terms of mouthfeel, and there are graceful floral tones to close. The winery team has been tweaking the oak regime, landing on 60% to 65% new oak complemented by once-used barrels. They've been working in this manner since 2019 to establish sweet and integrated tannins.
The excellent 2012 Saffredi is one of the best wines I have tasted from Fattoria le Pupille. This is an exuberant and expressive blend of Merlot, Cabernet Sauvignon and a smaller part Petit Verdot from the gorgeous hills of Maremma near Grosseto, Tuscany. The wine is rich and penetrating with a stunning sense of balance and inner poise. Dark cherry, blackberry, spice, leather, tobacco and grilled herb flow freely from the bouquet. The wine is softly textured with full body appeal. This fabulous Saffredi should age forward ten years or more. The Cabernet component of the wine shows perfect ripeness.

The 2014 Saffredi is on the market now, but could use more time to age and develop. The bouquet is slow to open and once it does, it shows dark fruit intensity with blackberry and dried cherry at the front. The are tight aromas of spice, cured leather and dark chocolate as well. This edition of Saffredi shows good textural richness in the mouth, but the overall effect is leaner and more compact compared to the excellent vintage that precedes it. Because that tannic firmness still needs time to relax, this bottle is definitely premature to drink now.
Wow, there is a very impressive freshness here that defies the heat of this vintage. The 2017 Saffredi does not seem like a 2017 at all. Now celebrating its 30th birthday, Saffredi is 60% Cabernet Sauvignon, 30% Merlot and 10% Petit Verdot. Thanks to the vineyard's proximity to the sea, leaving leaves on the vines and the sharp diurnal shifts of the area, the fruit was able to ripen in a balanced manner despite the hot and dry summer. The team at Fattoria le Pupille knew they would have to be ready to harvest early and lose some their yields, and they did. In the end, production was down 25%, but the result is a fresh, thick, and beautiful red made with ripe fruit and dark concentration. This is a great effort from Fattoria le Pupille.
