There is a new unsulfured Pinot Noir from a vineyard planted in 1932, the 2020 Sin Azufre Treinta y Dos. It fermented in old open-top 228-liter French barrels, alternating destemmed grapes and full clusters, and it matured in barrel. It has 12.5% alcohol and good freshness and acidity, despite the warmer vintage. Despite being vinified and aged in barrel, the oak feels very integrated; they used older barrels here, to give micro-oxygenation but not the aromatic or gustative influence from the wood. In search of purity, they didn't use any press wine, and it shows in the result. This is also very precise, and tasted blind, it would be very difficult to say that this is a wine with no added sulfur. There's precision and cleanliness. Only 900 bottles produced. It was bottled in December 2020.
