Callet is a red grape variety native to the Balearic Islands, where it has been cultivated for centuries in the Mediterranean climate of Mallorca. The variety is deeply rooted in the island's winemaking tradition and remains one of the most important indigenous grapes of the region. It thrives in the warm, dry conditions typical of the Balearic archipelago, developing good ripeness and character in this maritime climate.
The wines produced from Callet tend toward medium body with moderate acidity and soft tannins. The flavour profile typically features ripe red fruit characteristics—plum and cherry—alongside herbal and mineral notes that reflect the island's terroir. Callet is often blended with other varieties but can also produce varietal wines that showcase the grape's naturally approachable character. Both red and rosé styles are made from the variety, with the rosés displaying the lighter fruit expression typical of skin-contact wines.
Callet is primarily associated with Mallorca in the Balearic Islands, where it qualifies for protected designations including the Vino de la Tierra Mallorca IGP. The wines pair well with Mediterranean cuisine—grilled vegetables, seafood, cured meats, and lighter meat dishes. Its moderate structure and acidity make it suitable for drinking relatively young, though better examples can develop complexity with a few years of age.
