Lustau is a sherry producer based in Jerez de la Frontera in the Andalucía region of southern Spain, operating within the Jerez-Xérès-Sherry Denomination of Origin. The house specializes exclusively in traditional sherry production, working with the classic grape varieties and aging methods that define this historic wine region.

The Jerez triangle, encompassing Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María, produces sherry through a unique solera aging system where wines are blended across multiple vintages in stacked barrels. This method creates the characteristic oxidative and biological aging that distinguishes sherry styles. The region's albariza soils, composed of white limestone and clay, combined with the Atlantic influence, provide ideal conditions for growing Palomino grapes and developing the flor yeast that protects certain sherries during aging.

Lustau's current range demonstrates the diversity of sherry styles, from the delicate biological aging of Manzanilla Papirusa to the rich oxidative character of Oloroso expressions.
