José Cuervo is a Mexican tequila producer based in the state of Jalisco, operating from the town of Tequila in the highlands region. The company produces 100% agave tequilas using traditional methods that involve harvesting blue weber agave, slow-cooking the piñas in brick ovens, and distilling in copper pot stills. José Cuervo has been producing tequila since the late 18th century, making it one of Mexico's oldest continuously operating distilleries.

The Jalisco highlands, where José Cuervo sources its agave, are known for producing tequilas with bright, citrusy characteristics and mineral notes due to the volcanic soil and higher elevation. This terroir contributes to agaves that are typically sweeter and more aromatic than those grown in the lowlands. The region's climate, with warm days and cool nights, allows for slower agave maturation, concentrating flavors in the piñas.

José Cuervo's current range includes Tradicional Silver, an unaged blanco tequila that showcases the pure agave character, and Gold Especial Reposado, which is aged in oak barrels to develop additional complexity and smoothness.
