The latest release of Drappier's NV Brut Blanc de Blancs exhibits aromas of crisp yellow orchard fruit, oyster shell and white flowers. On the palate, it's medium to full-bodied, vinous and incisive, with a lovely cut, a youthfully frothy mousse and a chalky grip on the finish. Still a little introverted after its recent disgorgement, this is a fine Blanc de Blancs from Drappier, a Pinot Noir specialist.
