Corvina is the principal red grape of Veneto in northeastern Italy, where it has been cultivated for centuries. The variety thrives in the hillsides around Verona, particularly in the Valpolicella zone, where the combination of limestone-rich soil and the moderating influence of nearby Lake Garda creates ideal growing conditions. Corvina's thin skin and susceptibility to noble rot made it historically valuable for the appassimento method—the partial drying of harvested grapes—which concentrates sugars and flavors before fermentation.
The grape produces wines with moderate to full body, moderate tannins, and naturally moderate alcohol levels. Corvina typically shows red cherry and plum character on the nose, with subtle herbal and almond notes. In lighter expressions like basic Valpolicella, the wine maintains freshness and brightness. When used in the ripasso technique (where finished wine is re-fermented on the skins of dried appassimento grapes) or in fully dried-grape Amarone, Corvina develops deeper structure, richer dark fruit flavors, and greater complexity, though the wine remains balanced rather than heavy.
Corvina-based wines from Valpolicella pair naturally with northern Italian cuisine: cured meats, risotto, polenta, and game. The lighter Valpolicella versions suit fresh pasta and lighter meat dishes, while Amarone and Ripasso styles complement braised meats, aged cheeses, and more robust preparations. Beyond its home region, Corvina remains largely confined to Veneto, making the Valpolicella zone the primary source for understanding the grape's full range.
