The Chablis comes from 48 hectares belonging to William Fevre and was cropped at just 18 hectolitres per hectare. Subtle zestiness insinuates itself on the subtle cornmeal notes of this wine's nose. More air reveals fresh green-pear peel. The palate comes in with ripeness and pervasive citrus freshness. Bright and juicy, the wine has gentle but zesty concentration and fresh resonance.
The Chablis comes from 48 hectares belonging to William Fevre and was cropped at just 18 hectolitres per hectare. It has a compact bouquet with scents of cold stone but is very tight and needs more fruit expression. The palate is well balanced with a fine seam of acidity and is quite saline in the mouth with a precise finish. Now the palate shows more potential than the aromatics, but this will come good with a year in bottle.

Very elegant bouquet, developing citrus, white-fleshed fruit and floral notes. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation.

William Fevre is a renowned producer of Chablis wines, located in the heart of the Chablis region in Burgundy, France. The estate has a long history, dating back to the early 1950s when William Fevre, a native of Chablis, inherited a few hectares of vineyards. Today, the estate encompasses over 50 hectares of vineyards, including some of the most prestigious Premier and Grand Cru sites in the region.

The winemaking team at William Fevre employs a combination of traditional and modern techniques to craft wines that are both expressive and elegant. The grapes are hand-harvested and carefully sorted before being gently pressed and fermented in temperature-controlled stainless steel tanks. The wines are then aged on their lees for several months to develop complexity and depth.

The wines produced by William Fevre are known for their purity, minerality, and freshness. The Chablis wines are made exclusively from Chardonnay grapes and are classified according to their vineyard location. The entry-level Chablis is a crisp and refreshing wine with notes of green apple, lemon, and mineral. The Premier Cru wines are more complex and layered, with flavors of citrus, white flowers, and a hint of oak. The Grand Cru wines are the pinnacle of Chablis, with intense aromas of ripe fruit, honey, and hazelnut, and a long, lingering finish.

In addition to their Chablis wines, William Fevre also produces a range of other white wines, including Petit Chablis and Chablis Premier Cru Vaillons. These wines are made from grapes grown in vineyards outside of the Chablis appellation but still reflect the unique terroir of the region.

Overall, William Fevre is a producer that is dedicated to crafting wines that are true to their terroir and expressive of the unique character of Chablis. Their wines are highly sought after by wine lovers around the world and are sure to impress even the most discerning palate.

The French Wine region of Burgundy (aka “Bourgogne”) may be small in size, but its influence is huge in the world of vino. The complexity of Burgundy can cast fear into the heart of even a seasoned wine pro, but fear not – the region need only be as complicated as you want it to be. Yes, it is home to some of the most expensive wines in the known universe, but there are also tasty and affordable wines.

Main grapes:

Pinot Noir originated in Burgundy and these vines cover 34% of the region, accounting for 29% of overall wine production. The red grape does extremely well in limestone and clay soil, which helps create their complexity. Pinot Noir wines from Burgundy range in colour from cherry to brick, are light in body, and typically have red fruit and spicy flavours. Gamay is a red grape also grown in Burgundy, but only makes up 10% of the vines.

Chardonnay is the primary grape for white wines in Burgundy, making up 48% of the vines and 68% of production. Chardonnay appreciates Burgundy’s marl soil, which gives it delicate floral, fruit, and mineral aromas and full-bodied flavours. Aligoté is the second white grape, accounting for 6% grown. {Read more about the ancient Aligoté grape in Burgundy.}

The region does produce a sparkling wine called Crémant de Bourgogne. It can be made from Chardonnay, Pinot Noir, Pinot Gris, Aligoté, Gamay, Sacy, and Melon. Varieties include blanc, blanc de blancs, blanc de noirs, and rosé.

Chablis is a wine appellation located in the northernmost part of the Burgundy region in France. The region is known for producing some of the finest white wines in the world, made from the Chardonnay grape variety. The Chablis appellation covers an area of approximately 5,000 hectares, with vineyards planted on hillsides overlooking the Serein River.

The history of winemaking in Chablis dates back to the Roman era, when the region was known for producing high-quality wines. However, it was not until the Middle Ages that the wines of Chablis gained widespread recognition. In the 19th century, the phylloxera epidemic devastated the vineyards of Chablis, but the region was able to recover and rebuild its reputation as a producer of world-class wines.

The style of production in Chablis is unique, with a focus on producing wines that are crisp, mineral-driven, and expressive of their terroir. The vineyards of Chablis are planted on Kimmeridgian limestone, a type of soil that is rich in marine fossils and minerals. This soil gives the wines of Chablis their distinctive minerality and complexity.

The Chardonnay grape is the only grape variety allowed in the production of Chablis wines. The grape is known for its versatility and ability to express the terroir of the region. The wines of Chablis are typically unoaked, allowing the natural flavors and aromas of the grape and the terroir to shine through.

There are four main appellations within the Chablis region: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Petit Chablis is the most basic appellation, with wines that are light and refreshing, perfect for everyday drinking. Chablis is the most widely produced appellation, with wines that are crisp and mineral-driven, with notes of green apple and citrus. Chablis Premier Cru wines are more complex and full-bodied, with flavors of honey, hazelnut, and white flowers. Chablis Grand Cru wines are the most prestigious, with wines that are rich and full-bodied, with flavors of ripe fruit, honey, and toasted nuts.

In conclusion, Chablis is a unique and special wine appellation that produces some of the finest white wines in the world. The region's focus on terroir-driven winemaking, combined with the versatility of the Chardonnay grape, results in wines that are complex, mineral-driven, and expressive of their terroir. Whether you are a wine connoisseur or a casual wine drinker, a bottle of Chablis is sure to impress.
