Domaine Weinbach si trova ai piedi della collina di Schlossberg in Alsazia ed è denominata da un piccolo corso d'acqua, 'Wine Brook', che attraversa la Proprietà. Fondata nel 1612 dai monaci Cappuccini e poi rilevata dai fratelli Faller nel 1898, è oggi nelle mani di Catherine Faller e suo figlio Théo che producono alcuni dei vini più raffinati del paese.

Domaine Weinbach coltiva in biodinamica e raccoglie a mano tutto il raccolto con l'obiettivo di privilegiare la qualità alla quantità. Ogni vigneto ha il suo terroir specifico, che insieme alle altre caratteristiche uniche dell'uva e della millesimazione, traspaiono in questi vini eleganti e sofisticati grazie all'affinamento in grandi vecchi fusti di rovere.

Catherine e Théo coltivano una varietà di uve all'interno della tenuta - Pinot Gris, Gewürztraminer, Muscat, Pinot Noir, Pinot Blanc e Sylvaner - ma è il Riesling che è il re dei vini alsaziani e nel cuore della famiglia Faller. La Domaine possiede 8 ettari di vigneti di Riesling e sono stati tra i primi in Alsazia a ricevere lo status di Grand Cru nel 1975.

Su una base di rocce granitiche, i terreni sono bruno, leggermente acidi e ghiaiosi. I pendii del Schlossberg, ripidi e esposti a sud, assicurano un'esposizione ottimale al sole. I terreni sono molto ben drenati e si riscaldano molto rapidamente producendo frutti delicati con un bouquet di grande finezza.
