Montilla-Moriles is a Denominación de Origen located in the province of Córdoba in Andalusia, southern Spain. The appellation covers approximately 17,000 hectares of vineyards situated in the Sierra de Montilla and Sierra de Moriles hills, southeast of the city of Córdoba. The region was officially recognized as a DO in 1985, though winemaking in this area dates back centuries.

The climate is continental Mediterranean with very hot, dry summers and mild winters. The distinctive albariza soils, composed of white chalk and limestone, are similar to those found in Jerez but contain higher calcium carbonate content. Pedro Ximénez is the dominant grape variety, accounting for the vast majority of plantings, though Moscatel and other varieties are also permitted. The region produces fortified wines using traditional solera aging systems, creating styles including fino, amontillado, oloroso, and sweet Pedro Ximénez wines.

Montilla-Moriles wines are characterized by their natural strength, as the Pedro Ximénez grape achieves high sugar levels in this climate, often reaching 15-16% alcohol without fortification. The sweet Pedro Ximénez wines display intense concentrated flavors of raisins, figs, and dates with a dark mahogany color.
