Los Siete Misterios is a Mexican mezcal producer focused on expressing the diversity of agave species found across Oaxaca. Rather than centering production on the widely used Espadín agave, the brand has built its identity around lesser-known, often wild-harvested varieties, each processed and distilled to highlight their distinct botanical character. The name — "The Seven Mysteries" — reflects an approach rooted in exploring the range and complexity that different agave plants can offer.
Mezcal production in Oaxaca follows traditional methods that have changed little over generations: agave hearts (piñas) are roasted in earthen pit ovens, crushed by a stone tahona wheel, fermented in open wooden vats with wild yeasts, and distilled in clay or copper pot stills. This process imparts the smoky, earthy qualities associated with the category, though the intensity and flavor profile shift considerably depending on the agave variety used. Wild and semi-wild agaves like Barril and Coyote — both featured in the Los Siete Misterios range — tend to take longer to mature than cultivated varieties, sometimes decades, which concentrates their sugars and gives the resulting spirits a more complex, often herbal or fruity character compared to Espadín-based mezcals.
The Barril expression is made from Agave karwinskii, a tall, cylindrical agave that produces mezcals often noted for savory, mineral qualities. The Coyote is derived from Agave americana subsp. oaxacensis, a variety that typically yields broader, floral, and sometimes tropical-fruit-forward spirits. Together they illustrate the range of what single-agave mezcal production can achieve.
