Hungary's wine production centers primarily in the northeastern Tokaj region, which has produced sweet wines for centuries. The country's viticultural history dates back to Roman times, though it gained international recognition through its dessert wines. Tokaj represents Hungary's most significant wine-producing area, benefiting from the confluence of the Tisza and Bodrog rivers that create ideal conditions for botrytis cinerea development.

The Tokaj region's volcanic soils and continental climate with long, warm autumns facilitate the formation of noble rot on indigenous grape varieties, particularly Furmint and Hárslevelű. These grapes form the foundation of the traditional Tokaji blend, developing concentrated sugars and complex flavors when affected by botrytis. The region's cellars, carved into volcanic rock, provide consistent cool temperatures and humidity levels essential for aging these wines.

Tokaj's production centers on Aszú wines, classified by sweetness levels measured in puttonyos, ranging from 3 to 6 puttonyos based on the concentration of botrytized grapes. The traditional method involves adding baskets of hand-selected botrytized grapes to base wine, creating wines with remarkable longevity and complexity. Beyond sweet wines, the region also produces dry Furmint wines and Szamorodni, a wine style that can be either sweet or dry depending on the proportion of botrytized grapes in the harvest.
