Tequila is a distilled spirit produced exclusively in specific regions of Mexico from the blue agave plant (Agave tequilana Weber). By law, tequila must contain at least 51% blue agave, though premium expressions typically use 100% agave. The spirit undergoes a traditional production process where agave hearts are cooked, fermented, and double-distilled, resulting in a distinctive flavor profile that ranges from crisp and vegetal to rich and complex depending on aging.
Production is concentrated in five Mexican states, with Jalisco being the primary region, particularly around the town of Tequila. The spirit is classified into several categories based on aging: Blanco (unaged or aged less than two months), Reposado (aged 2-12 months in oak), Añejo (aged 1-3 years), and Extra Añejo (aged over three years). Each style offers different characteristics, from the pure agave expression of Blanco to the wood-influenced complexity of aged varieties. Some producers also create Joven, a blend of aged and unaged tequilas.
Quality tequila production involves traditional methods such as slow-cooking agave in stone ovens and using tahona wheels for crushing, though modern techniques are also employed. Notable producers include established names like Jose Cuervo and Patrón, alongside craft distilleries such as Fortaleza and newer premium brands like Clase Azul and Casa Dragones. The category spans from accessible mixing tequilas to sipping expressions that showcase the complexity achievable through careful agave selection and aging processes.
