The Judean Hills region lies in the mountainous terrain between Jerusalem and the Mediterranean coastal plain in central Israel. This elevated wine region sits at altitudes ranging from 400 to 900 meters above sea level, making it one of Israel's most important quality wine-producing areas. The region encompasses vineyards planted on the rocky, limestone-rich hillsides that characterize this ancient landscape.

The Mediterranean climate here is moderated by altitude, creating significant diurnal temperature variation that helps preserve acidity in the grapes. The terra rossa soils, formed over limestone bedrock, provide excellent drainage while retaining enough moisture for vine growth. Cool nights and warm days during the growing season allow for extended ripening periods, particularly beneficial for red wine production.

Bordeaux varieties dominate the plantings, with Cabernet Sauvignon, Merlot, and Cabernet Franc forming the backbone of most red wine blends. Many producers also work with Petit Verdot to add structure and color to their assemblages. The region's combination of Mediterranean climate, elevation, and limestone soils creates conditions well-suited to these international varieties, producing structured red wines with good aging potential.
