Tasting notes

Ontario is Canada's largest cool-climate wine region and home to Ice Wines . Donald Ziraldo pioneered the use of the Vidal hybrid grape variety, created by crossing Ugni Blanc (Trebbiano) and Rayon d'Or. Harvest occurs when temperatures reach -12°C. The grapes are then pressed quickly to extract only a small amount of highly concentrated juice. This 100% Vidal has a golden amber color. On the nose, it offers lingering aromas of mango and peach with a touch of barley sugar. Voluptuous on the palate, with sweet, pronounced aromas of papaya and nectarine wrapped in a biting acidity. The finish is smooth and silky with a hint of ginger.

About this wine

Ziraldo Vidal Icewine represents the pinnacle of Canadian sweet wine craftsmanship from Ontario's renowned Niagara Peninsula. This distinctive icewine is produced from carefully selected Vidal grapes harvested in their frozen state, a labour-intensive process that concentrates sugars and flavours to create a wine of pronounced intensity and remarkable balance. At 9.5% ABV, the wine achieves an elegant lightness despite its rich sweetness, making it exceptionally versatile.

The Niagara Peninsula's unique terroir, shaped by the moderating influence of Lake Ontario and Lake Erie, creates ideal conditions for icewine production. Ziraldo's winemaking philosophy prioritises the natural character of the Vidal grape, allowing stone fruit and tropical fruit notes to shine through with a long, refined finish. This sweet wine pairs beautifully with foie gras, spicy Asian cuisine, and shellfish, while also complementing desserts such as crème brûlée, tarte tatin, and fruit-based confections. Its low alcohol content and pronounced acidity make it equally suited to sipping as an aperitif or enjoying alongside tapas and small plates at the table.
