VS, or "Very Special," represents the entry-level classification in the Cognac appellation system established by the French government. This designation requires that all eaux-de-vie in the blend be aged for a minimum of two years in oak barrels, though most producers age their VS cognacs for three to five years. The classification system was formalized to provide consumers with clear quality indicators based on aging requirements.
VS cognacs typically display bright, fresh characteristics with prominent notes of grape and floral elements from the base wine, complemented by vanilla and light spice from oak aging. The younger age profile results in a more vibrant, less complex spirit compared to VSOP or XO expressions. These cognacs tend to be lighter in color, ranging from pale gold to light amber, with a clean finish that makes them versatile for both neat sipping and cocktail applications.
The VS category is dominated by the major Cognac houses, with virtually every producer offering an expression at this level. Hennessy Very Special, first introduced in 1865, remains one of the most recognizable cognacs globally, while Courvoisier's VS expression represents the house's interpretation of this foundational category. Both expressions exemplify the accessibility and consistent quality that define the VS classification.
