Grappa is Italy's traditional grape-based spirit, distilled from pomace—the pressed grape skins, seeds, and stems left over from winemaking. This clear, potent spirit typically ranges from 35-60% alcohol by volume and represents one of the oldest forms of distillation in Europe. Originally created as a way to avoid waste in wine production, grappa has evolved from a rustic peasant drink into a refined spirit with complex flavors that reflect both the grape varieties used and the distillation methods employed.
Production occurs throughout Italy, with the northern regions of Veneto, Friuli-Venezia Giulia, and Trentino-Alto Adige leading in both volume and innovation. Traditional grappa is made using copper pot stills, though modern producers may employ column stills or steam distillation. The pomace must be fresh and properly stored to prevent fermentation, and the distillation process requires careful temperature control to extract the spirit's essential character while avoiding harsh or bitter notes. Some producers age their grappa in wood barrels, which adds color and complexity to the final product.
Single-variety grappas showcase the characteristics of specific grape types, with Sangiovese-based versions offering the grape's typical cherry and herbal notes in concentrated form. Premium producers like Marchesi Antinori often create grappas from the pomace of their most celebrated wines, such as their Tignanello blend, while estates like Tenute Silvio Nardi specialize in grappas distilled from Brunello di Montalcino's Sangiovese pomace. These artisanal expressions demonstrate how quality grappa can capture and intensify the essence of great wine regions.
