The process of making Cognac involves distilling wine twice in copper pot stills, and then aging the resulting spirit in oak barrels for a minimum of two years.

One of the most highly ranked Cognac producers is Hennessy. Founded in 1765, Hennessy is the largest Cognac producer in the world. Their Cognacs are known for their smoothness and complexity, with notes of vanilla, oak, and fruit. Hennessy produces a range of Cognacs, from their entry-level VS (Very Special) to their high-end Paradis Imperial.

Another highly ranked Cognac producer is Remy Martin. Founded in 1724, Remy Martin is known for their high-quality Cognacs that are aged for longer than the minimum two years. Their Cognacs are characterized by their rich, fruity flavors and aromas, with notes of apricot, peach, and honey.
