"From the "best vineyard plots" on the chalky soils of the villages of Champtin and Bué-en-Sancerre, the Sancerre Sauvage opens clear, precise and fresh, as well as dense and complex on the nose. The fruit has certainly another character on the nose than all of the other Pascal Jolivet wines that I have tasted for this report. It's much more subtle but also intense and individual, and it is perfectly intertwined with the mineral flavours that shine in this bouquet. On the palate the mineral flavours dominate everything and give vitality, grip and tension to this expressive and naked wine, which is a big step above the others in term of character, expression and drinking pleasure. The fruit is clear, pure and fresh, rather white than yellow, and there are no signs of charming creaminess, roundness or impressive power. This is pure and expressive Sancerre of great character and quality. It has been fermented and aged for 12 months in stainless steel and bottled without filtration." - Stephan Reinhardt

The Sauvage Sancerre Blanc by Pascal Jolivet is the expression of his terroir and his most important white wine grape, the Sauvignon Blanc. This French white wine from the Sancerre shines bright golden yellow in the glass. On the nose, fruity-mineral aromas unfold, which give the wine its very own character. The palate shows the perfect balance between minerality and acidity with a slight saltiness. Full-bodied, highly complex, unique freshness and convincing down to the long finish.

Today, It covers 120 hectares between Sancerre and Pouilly Fumé, 60 hectares in Touraine for "Attitude". These 120 hectares produce 80% of the whole domain; 20% has been sourced from faithful growers loyal to Pascal Jolivet since the 1980s. Over the years, Pascal has developed his own much recognisable pure and elegant style of wines.

Pascal practices a biodynamic winemaking, which, in viticultural terms, views the farm as a cohesive, interconnected living system; such practices extend from the vineyard to the careful handling of the fruit post harvest in the winery. In Jolivet's winery following harvest, vinification begins with light must settling followed by juice fermentation with indigenous yeasts; next maturation on lees is fundamental for the concentration and the complexity of all Jolivet wines. The process is extremely natural and the slow fermentations nourish and sustainably stabilise the wines using very low levels of sulphur

Located between the centre and northwest of France, the Loire accounts for approximately eight percent of France's vineyards and is home to some of its most famous wines, notably Sancerre, Pouilly-Fumé, Muscadet and Vouvray. Its trade and vinous history are intrinsically linked to the 600-mile Loire River whose flow, from the Massif Central to Nantes, has created a rich diversity of terroirs while crossing several climatic zones.

Sancerre is a famous white Sauvignon Blanc appellation located on the left bank of the Loire. Its 14 communes are widely dispersed, covering nearly 3,000 hectares over vertiginous valleys at up to 350 metres above sea level, and three distinct soil types. As with nearby Pouilly-Fumé, an increasing number of single-vineyard wines are being raised in French oak, mostly 500-litre and demi-muids.
