Hand harvested grapes, are fermented in open barrels, with simple punch down of the cap. Addition of spirit stops the ferment, with a high quantity of residual, unfermented sugars. 18 months in 225 litre French barrels. Conscious aim to balance t the sweet notes with tannic grip to give balance.
COLOUR: Deep black-currant and damson.
AROMA: Well-ripened wild berries and brandied cherries, with hints of spice.
PALATE: Ripe red fruit, redcurrants with hint of spirit.
