Het verhaal begint met Robert Dauvissat, die als eerste wijnstokken plantte op deze kalkstenen heuvels en daarmee de basis legde voor een familietraditie die legendarisch zou worden.\n\nZijn zoon René zorgde in het midden van de 20e eeuw voor de groei van het domein, een tijd waarop Chablis nog verre van de wereldschat was die het vandaag is. Met geduld en overtuiging breidde hij de wijngaarden uit en verwierf zich een reputatie voor wijnen met zuiverheid en precisie, wijnen die spraken van steen, zeefossielen en het koele noorderlicht van Bourgondië.\n\nToen Vincent Dauvissat in 1989 het roer overnam, voerde hij dit erfgoed voort terwijl hij het verfijnde met zijn eigen subtiele aanraking. Respect voor de natuur, zorgvuldig handwerk in de wijngaarden en een filosofie van minimale interventie in de kelder werden de leidende principes. De wijngaarden van het domein – op de Kimmeridgische kalksteenbodem die waar Chablis definiëert – worden met diep respect bewerkt, gebruikmakend van biologische en biodynamische praktijken om de meest authentieke uitdrukking van elk perceel naar voren te brengen.\n\nTegenwoordig omvat het landgoed net iets meer dan 11 hectare, inclusief enkele van de meest gewaardeerde sites van de regio: La Forest, Vaillons en Séchet onder de Premiers Crus, en Les Clos en Les Preuses onder de Grands Crus.
