Semillon originates from the Bordeaux region of France, where it has been cultivated since at least the 18th century. The grape thrives in regions with moderate to warm climates and shows particular affinity for areas prone to noble rot (Botrytis cinerea), which concentrates sugars and creates the honeyed complexity found in world-famous dessert wines. While Bordeaux remains its spiritual home, Semillon has established significant plantings in Australia's Hunter Valley, where it produces distinctive dry wines, as well as in other regions including parts of South America.
Semillon typically produces wines with moderate acidity and a full, waxy texture. In dry expressions, the grape offers citrus and green fruit flavors with herbaceous undertones, often developing honeyed notes and increased complexity with age. When affected by noble rot, Semillon transforms into lusciously sweet wines with intense flavors of apricot, honey, and exotic spices. The grape's naturally low acidity makes it an excellent blending partner, particularly with the more acidic Sauvignon Blanc in both dry and sweet Bordeaux whites.
Semillon reaches its pinnacle in Sauternes and Barsac, where it forms the backbone of legendary dessert wines alongside Sauvignon Blanc and Muscadelle. In Australia's Hunter Valley, it produces age-worthy dry wines with a distinctive lanolin character. The grape also contributes to various wine styles including dry whites in Provence, where it adds body to blends, and even appears in some rosé and sparkling wine compositions. Sweet Semillon pairs exceptionally with foie gras, blue cheeses, and fruit-based desserts, while dry versions complement seafood, poultry, and creamy sauces.
