Complex, slightly creamy and toasted notes, scents of white flowers, yellow peaches, apricots, with a hint of wheat. In our mouth we can taste a Tonic, lemony flavour.
There is exceptional finesse and elegance in the Château Chalon, a wine from exceptional Triassic clay soils in the best-known terroir for Savagnin to be aged under a veil of yeasts. The wine matured in barrels that were untouched and never topped up, and the barrels were kept in two different types of cellar: 60% in a dry and warm cellar and 40% in a cold and wet cellar, to achieve a mix of styles that combines the more oxidative aromas with the more biological ones. It has all the classical descriptors, iodine and kerosene, dry morels, curry and green walnuts, but all in a very subtle and elegant way. The palate is velvety and seamless, fresh and light yet with pungent and long-lasting flavors. It finishes with a very tasty and salty note. This is truly outstanding. It seems like the Château Chalon from Tissot is going from strength to strength...
