Billecart-Salmon is a champagne house that has been producing high-quality champagne since 1818. The house is located in the village of Mareuil-sur-Aÿ in the Champagne region of France and is known for its elegant and refined style of champagne, which is produced using traditional methods.

The Brut is the flagship champagne of Billecart-Salmon. It is a blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes, which are sourced from the best vineyards in the Champagne region. The champagne is aged for a minimum of three years in the cellars of the house, which gives it a complex and rich flavor.

The Brut has a pale gold color and a fine and persistent mousse. On the nose, it has aromas of white flowers, citrus fruits, and brioche. On the palate, it is fresh and lively, with flavors of lemon, pear, and almond. The champagne has a long and elegant finish, with a hint of minerality.

Billecart-Salmon is known for its attention to detail in the production of its champagne. The grapes are hand-picked and sorted to ensure only the best quality fruit is used. The wine is fermented in stainless steel tanks, which preserves the freshness and fruitiness of the grapes. The champagne is then aged in the cellars of the house, which are located 30 meters underground, where the temperature and humidity are carefully controlled.

Billecart-Salmon is a family-owned champagne house that has been passed down through generations. The current owners, François and Antoine Roland-Billecart, are committed to maintaining the high standards of quality and tradition that have been established by their ancestors.

Overall, Billecart-Salmon Brut is a champagne that is elegant, refined, and complex. It is a perfect choice for any special occasion or celebration.

It offers aromas of green pear, honeysuckle, brioche and white peach. Disgorged in early 2024 with a dosage of three grams per liter, this reimagined cuvée has recently undergone a significant reduction in dosage. The sweetness that so often presents itself on the finish of NV Champagnes from Grandes Marques is no more. Medium to full-bodied, lively and charming, with a textural attack and vibrant acidity, it culminates in a long, precise finish.

In 1668, Dom Pérignon is said to have discovered how to make sparkling wine; today his technique is used the world over, although Champagne continues to make some of the finest. France’s most northerly wine region, Champagne is now home to 15,000 growers and 290 ‘houses’. A blend of grape varieties is usually required: white Chardonnay to add fruit and elegance, and two reds – Pinot Noir and Pinot Meunier – to provide body and backbone.
