Domaine Pattes Loup

Domaine Pattes Loup is a small Chablis estate run by Thomas Pico, who took over vineyards previously farmed by his family and established the domaine in the early 2000s. Pico works organically in the vineyard and favours minimal intervention in the cellar, using older oak vessels rather than stainless steel — an approach that distinguishes his wines from the more neutral, tank-fermented style common in the appellation. The domaine holds parcels across several classified sites within Chablis.

Chablis sits at the northern limit of Burgundy, where Chardonnay grown on Kimmeridgian limestone and clay produces wines markedly different from those of the Côte de Beaune. The soils — composed of ancient marine sediment rich in fossilised oyster shells — impart a characteristic mineral edge and bracing acidity. Premier Cru vineyards in Chablis occupy specific slopes with optimal sun exposure, giving wines more concentration and structure than village-level bottlings while retaining the appellation's signature tension.

Les Beauregards is a Premier Cru climat on the left bank of the Serein river. In Pico's hands it tends to show a textural richness that reflects his use of barrel ageing, alongside the saline, flinty character typical of the appellation. The 2022 vintage in Chablis was marked by warm, dry conditions that produced ripe, generous fruit with good natural concentration.
